Fiddlehead Pizza
First up with our trove of fiddles this Spring is Fiddlehead BBQ Pizza: Start with a 2 pound dose of Kaitlyn’s homemade pizza dough fresh from the bread machine. For a base, we’re using Julee’s homemade BBQ sauce. A generous amount of lightly blanched fiddles goes next. Adding a can of rinsed cannellini beans adds some quality protein and helps the pizza survive to become tomorrow’s lunch without adding too much of their own flavor. Another swirling of BBQ sauce goes on top of the beans & fiddles. Next is a layer of shredded Katahdin cheddar cheese from Springdale Farm. Sprinkle crumbled blue cheese on top of the cheddar. The crust, just the crust, gets painted with buckwheat honey and then sprinkled with fennel seed. Now that’s a pizza pie!
